Today though it’s chilly and rainy so since I’m sitting on the sofa, Miss Chandler joined me for a nap (she’s tired from sleeping all night 🤣)

Instagram post 2236570431650236439_7631305429 These mini-omelettes have been a HUGE hit in my house - I’m amazed at how much less hectic mornings have become and if someone wakes up too late to sit down and eat these are easy to pop in a lunch box to eat on the go. For this batch I mixed in scallions, hatch chilies, sun dried tomatoes, and a dollop of the leftover cream cheese/herb filling that I stuffed jalapeños with on Super Bowl Sunday. I just put this pork roast on and in 8 hours it will be melt-in-your-mouth fantastic! The recipe is on my blog (link in profile).
